3 oz dark chocolate, chopped
2 large eggs
3/4 cup (150g) granulated sugar
1/4 cup (55g) dark brown sugar, packed
2 tsp vanilla extract
1/2 cup (65g) all-purpose flour
1/2 tsp kosher salt
1/4 tsp baking powder
1/4 cup semisweet chocolate chips
3/4 cup regular M&M’s, plus more for topping
1/4 cup mini M&M’s, plus more for topping
Instructions
Preheat oven to 350°F. Line an 8×8-inch baking dish with parchment and grease lightly.
Melt butter in a saucepan. Stir in oil and cocoa powder. Let bubble 15 seconds.
Remove from heat and add chopped chocolate to melt. Set aside.
Whisk flour, salt, and baking powder in a bowl.
In a large bowl, whisk eggs and sugars vigorously for 2 minutes until pale and frothy.
Stir in vanilla and warm chocolate mixture.
Gently fold in dry ingredients. Just before combined, add chocolate chips and M&M’s.
Pour batter into pan. Top with extra M&M’s.
Bake for 25–28 minutes until edges are set.
Tap the pan to deflate. Cool 90 mins at room temp or chill 45 mins before slicing.
Notes
Use a mix of regular and mini M&M’s for colorful texture.
Do not overbake—brownies continue to set as they cool.
To double recipe, use a 9×13-inch pan and bake 30–35 mins.
